You need:
5 Chicken Breasts - skinned, bones and flattened
2 eggs beaten
1 c. Paremesan cheese, grated
2 T. butter
2 T. Cecchetti Olive Oil
1/2 dry marsala wine
1/2 c. sweet marsala wine
1/2 lb. fresh mushrooms
1/2 T lemon juice
pinch of basil
1 T. parsley
Prepare chicken breasts and dip in egg mixture and then in parmesan cheese. Bake in oven at 350 for 20-25 minutes. Heat butter and olive oil in pan and cook mushrooms. Add wine, lemon juice, basil and parsley. When chicken is done, pour sauce over it.
Optional: You can use veal or pork in place of chicken. Add capers if desired.
