Grilled Chinese Chicken Salad

Lettuce tossed with mandarin oranges, green onion, pea pods, water chestnuts, chow mein noodles then topped with grilled chicken
Hands On: 15 minutes
Total: 60 minutes
Makes: 6 servings (1-1/2 cups each)


Ingredients:
  
 Cecchetti's olive oil for Grilling
 
 large boneless skinless chicken breasts (2 large breast = about 1 lb)
1/4 
 cup La Choy® Soy Sauce       1/4 cup cecchetti's olive oil
 
 cup Knott's® Oriental Chicken Salad Dressing, or your favorite Chinese chicken salad dressing
 cup pea pods, cut in half
1/2 
 cup chopped green onions
1/2 
 cup La Choy® Sliced Water Chestnuts, drained
 cups chopped iceberg lettuce
 cups chopped romaine lettuce
 can (11 oz each) mandarin oranges, drained
 cup La Choy® Chow Mein Noodles
1/2 
 cup sliced almonds, lightly toasted


Directions
  1. Spray grate of outdoor grill and grilling utensils with grilling spray. Preheat grill to medium heat according to manufacturer's directions.
  2. Place chicken in medium bowl. Pour soy sauce and olive oil over chicken and marinate for 30 minutes. Grill chicken until no longer pink; allow to cool, slice thinly.
  3. Pour dressing into medium bowl. Add grilled chicken, pea pods, green onions, and water chestnuts; toss lightly. Chill in refrigerator 15 minutes or until serving time.
  4. Toss lettuce, oranges, chow mein noodles and almonds together in serving bowl. Top with chicken mixture and serve with additional dressing, if desired.
