| Grilled Chinese Chicken Salad |
Lettuce tossed with mandarin oranges, green onion, pea pods, water chestnuts, chow mein noodles then topped with grilled chicken

large boneless skinless chicken breasts (2 large breast = about 1 lb) |

cup La Choy® Soy Sauce 1/4 cup cecchetti's olive oil

cup Knott's® Oriental Chicken Salad Dressing, or your favorite Chinese chicken salad dressing |
| 1 |
cup pea pods, cut in half |
1/2 |
cup chopped green onions |
1/2 |
cup La Choy® Sliced Water Chestnuts, drained |
| 4 |
cups chopped iceberg lettuce |
| 4 |
cups chopped romaine lettuce |
| 1 |
can (11 oz each) mandarin oranges, drained |
| 1 |
cup La Choy® Chow Mein Noodles |
1/2 |
cup sliced almonds, lightly toasted |

Directions |
- Spray grate of outdoor grill and grilling utensils with grilling spray. Preheat grill to medium heat according to manufacturer's directions.
- Place chicken in medium bowl. Pour soy sauce and olive oil over chicken and marinate for 30 minutes. Grill chicken until no longer pink; allow to cool, slice thinly.
- Pour dressing into medium bowl. Add grilled chicken, pea pods, green onions, and water chestnuts; toss lightly. Chill in refrigerator 15 minutes or until serving time.
- Toss lettuce, oranges, chow mein noodles and almonds together in serving bowl. Top with chicken mixture and serve with additional dressing, if desired.
