Karen & Friends Brownie Recipe
Makes 16

  • 1/2 Teaspoon salt
  • 2 Eggs (or 4 egg whites)
  • 3 Tablespoons Cecchetti Extra Virgin Olive Oil
  • 2 Teaspoons Vanilla
  • 3/4 cup chunky applesauce or bananna mashed
  • 1 cup sugar
  • 1/3 cup cocoa
  • 1 cup flour
  • 1/2 cup chocolate chips
  • 1/2 pecans, walnuts or Brazil nuts chopped
  • 1/2 teaspoon baking soda
  • 2 teaspoons orange flavoring or orange oil

    1. Combine eggs, oil, orange flavoring or oil, vanilla and applesauce in mixing bowl. Sift together flour, cocoa, salt, sugar and baking soda. Add egg mixture, stir until blended. Add chips and nuts.

    2. Pour into greased 8 inch baking pan. Bake at 350 degrees 25 to 35 minutes or until cake tester comes out clean when inserted in center.


    Frosting:
    1/2 cup chocolate chips (or mini marshmallows)

    As soon as brownies comes out of oven, sprinkle top with chips, let melt and spread evenly to edges.

    Variation:
    Spread with 3/4 cup raspberry jam.

    Variation:
    Add
  • 1/3. cup raisins
  • 1/2 cup coconut
  • 1 teaspoon instant coffee crystals
